Cabbage soup

Here’s a simple and hearty cabbage soup recipe:

Ingredients:

  • 1 small head of cabbage, chopped
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (with juice)
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions:

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are softened.

  2. Add Garlic and Cabbage: Stir in the minced garlic and chopped cabbage. Cook for another 5 minutes, stirring occasionally, until the cabbage begins to wilt.

  3. Add Liquid Ingredients: Pour in the diced tomatoes (with juice) and broth. Add thyme and the bay leaf.

  4. Simmer: Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 30-40 minutes, or until the cabbage is tender.

  5. Season: Remove the bay leaf and season with salt and pepper to taste.

  6. Serve: Ladle the soup into bowls and garnish with fresh parsley if desired.
